Born in Winona, JD has been working the Twin Cities restaurant scene for almost 15 years. In 1996, he began cooking at Parasole’s Pronto Ristorante, where he worked under fellow Heartland Food Network chef Rick Kimmes. In 2000, Fratzke continued working with Parasole, preparing North African and Indian food at Chino Latino. As executive chef at Muffuletta in the Park (Saint Paul), he combined diverse food influences: the Mississippi River valley of Winona, the Mediterranean flavors of his earliest teachers, and flavors of the ancient spice trade routes.

Now at the Strip Club in Dayton’s Bluff (Saint Paul), he is upholding his commitment to local producers and distributors from southeast Minnesota.
